Roasted Tomato and Feta Toast

Tomato Season is upon us! This has got to be hands down, my favourite way to eat tomatoes. It is my go-to savoury breakfast option and I am currently having this three times per week.
Ingredients:
1 cup cherry tomatoes (or any ripe tomatoes, cut into bite-sized pieces)
Olive oil
Dried basil, oregano, and paprika (to taste)
Sea salt and black pepper (to taste)
1/4 cup feta cheese or goat cheese, crumbled
2 slices of sourdough bread
Fresh basil leaves for garnish (optional)
Instructions:
Preheat oven to 400°F.
Halve the cherry tomatoes and place on foil or parchment-lined baking sheet. Drizzle with a generous amount of olive oil. Add spices and salt to taste and mix briefly with your hands on the baking sheet.
Roast for 15-20 minutes or until tomatoes are soft and blistered. Remove from heat, add feta, and place back into the oven for another 5 minutes to soften feta. Remove and let cool.
As the tomatoes are cooling, toast the bread: 2-3 minutes or to your preference. Remove from heat
Assemble your toast: scoop tomato mixture onto toast and top with fresh basil if desired. Enjoy!
